Virtual Cookie Exchange

This is via Deby's virtual cookie exchange (via Jen). Wanna join the fun? Post a recipe on your blog and leave me (and Jen and Deby) a comment with a link. If you don't have a blog, you can leave your recipe in the comment section. I am looking forward to trying out some new holiday favorites!

Our lovely neighbor Karen baked these for the holidays last year, and they were fantastic! Connie baked a batch this year and they were even better. They aren't hard to make, she says.

Maraschino Chocolate Thumbprint Cookies

2 10-ounce jars maraschino cherries without stems
1-1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup butter or margarine, softened
1 cup granulated sugar
1 egg
1-1/2 teaspoons vanilla
1 cup semisweet chocolate chips
2 tablespoons 2 percent milk
No-stick baking spray

Drain maraschino cherries, reserving 1 teaspoon juice. Combine flour, cocoa, salt and baking powder in a large mixing bowl; mix well.

Put butter and sugar in a medium bowl. Beat with an electric mixer on medium speed three to four minutes, or until well blended. Add egg and vanilla; mix well. Add flour mixture; mix well.

Put chocolate chips and milk in a small saucepan. Stir constantly over low heat until chocolate melts. Stir in reserved maraschino cherry juice. Let cool slightly.

Shape dough into 1-inch balls. Place on prepared baking pan. Push in centers with thumb; spoon 1 teaspoon chocolate mixture into each thumbprint and top with a cherry. Bake in a 350-degree oven 10 to 12 minutes, or until cookies are firm. Remove to wire racks. Let cool completely. Store in an airtight container.

Makes about 3 dozen.

mmmmmmm, cookies.

How about if we do a cookie exchange? Send me those cookies and when I get around to it, assuming I remember, I'll send you a batch of my cookies.

I'll tell you what... We'll put our cookies in escrow, and when you have your batch made you put your cookies in escrow, and then when the escrow company is satisfied that both parties have met their obligations they'll release the cookies to the respective parties.

Ya gotta be careful when you deal with an attorney. :)
