T.G.I. Fryday!

In California I used to enjoy the occasional meal at Shakeys Pizza Parlor. In addition to pizza, they have really good fried chicken and Mojo potatoes. We don't have a Shakeys in Central Oregon, but we have Izzy's Pizza, whose owner I believe used to operate a Shakeys.

I thought it'd be nice to make some Mojo potatoes like they have at Shakeys and Izzy's, so I googled around a bit and found a recipe for Shakey's-like Mojos. Tonight Connie and I whipped up a batch, and they were goooood. Connie had fried fish with hers, so her dinner ended up being "fish and chips".

Now we can tweak the recipe to better suit us (more cayenne!), and save us a trip into Bend. kewl

We used to have a Shakey's Pizza in Bend, many years ago. That's what I grew up with. Where the Steve Scott real estate place is now, across from the Grocery Outlet.

I remember going to Shakey's. I think all the one's in Washington closed up decades ago. Abbey's Pizza in eastern Washington is a favorite of ours. I think they may have some locations in Oregon. I'll have to check the top of the pizza box next time.

Alan: We have an Abbey's Pizza in Bend, and we've eaten there a few times. Good pizza.

Jon: I think the owner of Izzy's used to operate the Shakey's in Bend, but left to start his own place. It tastes almost identical.

Melissa:

Ingredients:

6 Fresh Potatoes (we used Yukon Gold)
Canola Cooking Oil
2 Eggs
1 Cup Of Flour
Salt & Pepper
1/2 teaspoon cayenne
2 teaspoons thyme
2 tablespoons of milk
1 tablespoon of slightly melted butter

Directions:

1-Place eggs in bowl and beat; add milk and butter & mix.
2-Place Flour, Thyme & Cayenne in second bowl.
3-Place Oil 3 inches deep in Frying Pan
4-Cut each potato into 6 (1/4-inch) Mojo rounds
5-Place MoJo rounds in egg mixture covering completely
6-Then Roll MoJo potatoes in Flour Mixture.
7-Place MoJo potatoes on cookie tray while others are battered
8-Once all MoJo potatoes are battered drop in frying pan.
9-Make sure oil covers the MoJo potatoes completely. If needed add more oil.
10-Once golden brown, and cooked, drain oil and add salt.
11-Serve.

I think next time we make these, I'm going to fry up some artichoke hearts in the same batter.
