Goodman's Salsa Recipe

Tonight COWPU had a barbecue. It was great. Evan cooked bacon, pork chops, chicken, steak, did I say bacon?, corn on the cob, asparagus and bacon! Oh yeah, and salmon. I had some of all but the salmon. Great stuff.

I brought corn on the cob for the BBQ, and some chips and my homemade salsa. Several people wanted the salsa recipe. (Actually, I've made better batches, but anyway...) So here it is. After you've made it once or twice it only takes about five or ten minutes.

Goodman's Salsa Recipe (inspired by Chevy's)

3 or 4 medium tomatoes
5 slices of jalapeño (Mezzetta hot)
8 stalks of fresh cilantro
1 tsp of white vinegar
1/2 tsp of salt
1/2 tsp of liquid smoke (Colgin hickory)
1 slice of yellow onion, diced (optional)
2 cloves of garlic, chopped (optional)

Cut the tomatoes in half. Remove the stems, the seeds and the tough part where the stem attaches. Set two halves aside. Cut remaining tomatoes into quarters and drop in a blender. Strip the cilantro leaves off the stems and drop them in, plus all the remaining ingredients except the onion and the last tomato. Press the Chop button repeatedly until the mixture is somewhat smooth, about 5 or 10 seconds. Pour into serving or storage container. Dice the two tomato halves you set aside and mix into the salsa. Dice the onion and stir in. Taste and adjust. You're done!

If you make this without the onion and garlic, you can serve it at parties without ruining everyone's breath. I use fresh ingredients except for the sliced jalapeños which I buy by the jar.

I eat this stuff with chips, on eggs, on steak, on tacos, you name it. Everything's better with salsa!

Hey Dave-

Great salsa last night at COWPU! Thank you for the recipe. I will try it out on our camping trip this weekend. I can practice cooking. When are you going to start that cooking group by the way? :)

If I started a cooking club, I'd probably have it out here in the boonies. Get Jen to do it and she'll probably have it someplace sane, like in Bend. ;)
